During the years of prohibition, Willy Bovet encountered Robert Bobiller, a clandestine distiller who would decisively shape his path. From him, Willy received not only a recipe, but the essential gestures and discernment required to practice the craft in discretion.
With legalization in 2005, Willy obtained an official license alongside Francis Martin and Lucien Fornoni, each distilling his own absinthe while sharing a common authorization. After several years, the partners chose independence, allowing each house to affirm its singular identity.
It was during this period that Françoise, Willy’s daughter, became increasingly involved in the distillery. Having supported the work informally for years, she eventually joined it fully. She recalls discovering small notes and sketches left by her father, quiet traces of a craft lived with dedication.
Today, Françoise leads the distillery, carrying forward the heritage transmitted to her and affirming her place as a woman distiller within a lineage shaped by both discretion and perseverance.
