Distilled by François Bovet, trained under the masters of Val-de-Travers after legalization, Bovet La Valote belongs to a singular family lineage. Heir to her father, Willy Bovet — a watchmaker by trade and clandestine distiller — she carries forward a tradition where precision of gesture and absinthe culture converge. A living transmission rooted in practice and discipline.

Our Story

During the years of prohibition, Willy Bovet encountered Robert Bobiller, a clandestine distiller who would decisively shape his path. From him, Willy received not only a recipe, but the essential gestures and discernment required to practice the craft in discretion.

With legalization in 2005, Willy obtained an official license alongside Francis Martin and Lucien Fornoni, each distilling his own absinthe while sharing a common authorization. After several years, the partners chose independence, allowing each house to affirm its singular identity.

It was during this period that Françoise, Willy’s daughter, became increasingly involved in the distillery. Having supported the work informally for years, she eventually joined it fully. She recalls discovering small notes and sketches left by her father, quiet traces of a craft lived with dedication.

Today, Françoise leads the distillery, carrying forward the heritage transmitted to her and affirming her place as a woman distiller within a lineage shaped by both discretion and perseverance.

Our Story

Savoir-faire

The absinthes of the Bovet distillery are constructed from a constant foundation of ten plants, with proportions carefully adjusted to reveal distinct aromatic profiles. Variation emerges through balance rather than multiplication.

Distillation takes place in small stills, yielding limited batches. Among them remains the still clandestinely built for Willy in 1973, as an enduring witness to the era that shaped the house’s identity.

The range includes four permanent expressions, complemented by special editions and bespoke creations for private clients. Across all productions, the philosophy remains unchanged: fidelity to inherited recipes, measured craftsmanship, and a preference for botanicals sourced from the region whenever possible.
