In Fleurier, droguist-herborists Pierre-André and Cosette Virgilio distill an absinthe drawn from a recipe passed down through three generations. Heir to a family practice, a discreet figure of the clandestine period, and master to a new generation of distillers, Virgilio embodies a rare continuity rooted in plants, practice, and the transmission of craft.

Our Story

Within the family of Pierre-André Virgilio, absinthe is not a recent vocation but rather a lineage that reaches back through generations. In 1879, his maternal great-grandfather was employed by Pernod, the historic house established in Couvet in 1798, placing the family’s roots at the very foundation of modern absinthe.

Immersed in this universe from childhood, Pierre-André grew up among the language of plants and distillation. His father, a respected village druggist, was a discreet reference point for local distillers, who turned to him for alcohol and carefully selected botanicals. Knowledge circulated quietly, carried by trust and shared expertise.

When Pierre-André and his wife Cosette took over the family drugstore in Fleurier, that tradition of transmission endured. In the years following legalization, they obtained their distilling license, extending their pharmaceutical practice into the production of absinthe. Distillation became a natural continuation of their métier, uniting family heritage with rigorous botanical knowledge rooted in the Valley.

At the Distillerie de l’Herboriste, each recipe reflects a dialogue between historical memory and botanical precision. To evoke the profile of a 19th-century absinthe, the house reinterpreted a formula passed down from Pierre-André’s maternal great-grandfather, adapting it with measured care.

Their expertise as druggists informs every stage of production, from the selection of plants to the balance of aromatic structures. Whenever possible, botanicals are sourced from Val-de-Travers, where soil and climate lend particular clarity and intensity to their expression.

Alongside its absinthes, the house develops other plant-based creations, several of which have been distinguished with gold medals at the DistiSuisse competition. Across all expressions, a single philosophy prevails: disciplined craftsmanship, deep respect for botanicals, and fidelity to a heritage where pharmacy and distillation have long shared the same foundations.
