Absintherie du père François

Distilled in the historic buildings of the former Sandoz distillery in Môtiers, the "Père François" is an artisan rooted in the heritage of Val-de-Travers spirits. Botanicals come from local cultivation, and the recipe evokes the traditional “bleue” style long recognised for its authentic character.

Our Story

The Distillerie du Père François was established in 2005, at the very moment absinthe regained its legal status in Switzerland. For François Bezençon, collector, historian, and devoted guardian of absinthe’s memory, this was not merely an administrative milestone, but the continuation of a long-held passion.

On March 1, 2005, alongside his sons Claude and Patrick, he conducted the first authorized distillation in Switzerland since 1910, and the only one carried out that day. The gesture was both technical and symbolic, marking the official return of absinthe to Val-de-Travers after nearly a century of silence.

After months of careful trials, the house released its first absinthe through the family beverage depot, itself active for more than three decades. Soon thereafter, the Absintherie du Père François opened its doors in Môtiers, within the historic walls of the former Sandoz distillery: a setting where revival and tradition quietly converge.

François approaches distillation with the same rigor that defines his historical research. Nine years after his initial recipe, he developed a new interpretation shaped by attentive listening and refinement, a testament to a craft that evolves without abandoning its foundations.

Initially supplied with botanicals from Val-de-Travers by Yves Kübler, he later chose to oversee sourcing independently, selecting plants with particular care and discernment. Balance, clarity, and aromatic precision remain central to each composition.

At the heart of the distillery resides another dimension of the house: François’ personal collection dedicated to absinthe’s history. Rare and meticulously assembled, it forms a living museum that has drawn visitors from across the world, reinforcing the house’s role not only as producer, but as custodian of memory.

The Distillery

Our first ‘cuite’ (distillation run) took place on the day absinthe was legalized, March 1, 2005. We haven’t changed the original recipe: we adjust when necessary, but the idea is to remain faithful to what we’ve been doing from the very beginning.
