The Story of Absinthe
The Val-de-Travers, a secluded valley straddling the Franco-Swiss border, is where it all began. Here, the unique combination of altitude, limestone springs, and wild botanicals — grande absinthe, petite absinthe, green anise, and fennel — created the terroir that gives authentic absinthe its unmistakable character.
For nearly a century, absinthe was banned across most of Europe and the Americas, victim of moral panic and political intrigue rather than any genuine danger. Its rehabilitation in the early 2000s sparked a renaissance of artisan distillation, with the Val-de-Travers once again at the forefront.
Today, a new generation of distillers honours the ancestral recipes while bringing their own creativity to the craft. Each distiller's absinthe reflects their unique interpretation of tradition — the maceration time, the botanical proportions, the copper alembic's shape, and the water source all contribute to a distinct aromatic signature.
